  • 4 cups White Long Grain Rice - cooked*
  • 1 Yellow Onion - chopped
  • 4 Green Onions - diced
  • 3 Garlic Cloves - minced
  • 1 tsp Fresh Ginger - minced or 1/8 tsp Ground Ginger
  • 3 tbsp Soy Sauce
  • 1 1/2 tsp Sesame Oil
  • 1 1/2 tbsp Oyster Sauce
  • 1/8 tsp Chinese 5 Spice optional
  • 1 Egg
  • 1 cup Frozen Peas and Carrots** - thawed
  • 4 tbsp Canola Oil

  • Cook your rice (if you do not have some already) according to its instructions. We make ours in the Instant Pot.
  • In a wok or a large skillet, heat 2 tbsp of Canola Oil on medium high heat. Once hot, add in the rice.
  • Cook rice, flipping as needed, until dry and slightly crispy (about 5-7 minutes).
  • Remove the rice to a bowl and set aside. Heat another 1 tbsp of Canola Oil in the wok or skillet.
  • Add the chopped Yellow Onion, diced Green Onions, minced Garlic, and the minced Ginger to the hot oil.
  • Stir for only about a minute or two or until the onion is starting to soften and the garlic is fragrant.
  • Add the rice back in and stir together. Add in the 3 tbsp of Soy Sauce, 1 1/2 tsps of Sesame Oil, the 1 1/2 tbsp Oyster Sauce, and 1/8 tsp of Chinese 5 Spice. Stirring all together.
  • Create a well or opening in the center of the rice. Add in the final 1 tbsp of Canola Oil. Then add the egg on top. Allowing it to set in the center and cook until the white of the egg begins to look fully cooked.
  • Scramble the egg and stir it together with the rest of the rice.
  • Add the 1 cup of Peas and Carrots and stir together.
  • Allow rice to remain on heat for a couple of minutes to crisp up the bottom rice and heat the peas and carrots. Stirring and repeating the process to fully crisp up the rice.
  • Add more soy sauce, salt or pepper to taste and enjoy!

* This usually means you'll add 2 cups of uncooked rice when you cook your rice (it'll become 4 cups cooked), but check the instructions on your rice.
**Fresh carrots diced can be substituted if you cannot find a frozen pea and frozen carrot combo pack. Frozen Peas on their own are sometimes easier to find!
