Eggnog Quick Bread with an Orange Glaze

Ingredients
  

For the Bread:

  • 1/2 cup Salted Butter softened, room temperature (1 stick)
  • 1 cup Granulated White Sugar (186g)
  • 1 1/2 tsp Vanilla Extract (6.5g)
  • 2 Eggs
  • 1 cup Eggnog (256g)
  • 2 cups Flour all-purpose (285g)
  • 2 tsp Baking Powder (5g)
  • 1 1/2 tsp Kosher Salt (6g)
  • 1 tsp Ground Cinnamon (2.5g)
  • 1 tsp Ground Nutmeg (2g)
  • 1/4 tsp Ground Cardamom (0.5g)
  • 1/4 cup Brown Sugar (55g)

For the Glaze:

  • 1 cup Powdered Sugar (120g)
  • 2 tbsp Eggnog (32g)
  • 1 tbsp Orange Juice usually just one half of the orange
  • Zest from 1 Orange

Instructions
 

  • Preheat the oven to 350 degrees Fahrenheit and grease the bread pan.
  • In a medium sized bowl, mix together the 2 cups Flour, 2 tsps of Baking Powder, 1 tsp Ground Cinnamon, 1 tsp Ground Nutmeg, 1/4 tsp of Ground Cardamom and 1 1/2 tsps Kosher Salt. Set aside.
  • In a bowl of a stand mixer or a second medium sized bowl, cream together the 1/2 cup of Butter with the 1 cup of Granulated White Sugar and the 1 1/2 tsp of Vanilla Extract until light and fluffy. Scraping down the sides as needed; about 2 minutes.
  • Add in the eggs one at a time until well combined. Add the 1 cup of Eggnog and mix until also well combined.
  • Gradually add in the flour mixture and mix until fully incorporated.
  • Pour half of the batter into the pan and the sprinkle with half of the Brown Sugar. Repeating the same process by pouring the rest of the batter on top and sprinkling with remaining Brown Sugar.
  • Bake for 50 minutes or until a toothpick comes out clean.
  • Allow bread to cool in pan for 20 minutes before flipping out onto a platter.
  • In a small bowl, whisk together 1 cup of Powdered Sugar, 2 tbsps of Eggnog, 1 tbsp of Orange Juice, and Orange Zest.*
  • Pour over the bread and spread using a knife or spoon. Allow to set for about 10 minutes and then enjoy!

Notes

*If the glaze is too thick for your liking simply add more eggnog or if it is too runny just add more powdered sugar.
