These Fudge Brownies are a rich and delightful treat.

The Facts

Brownies are a staple dessert that everyone has had at some point in time. The unfortunate part is it is not uncommon to find brownies that are not so great. They can easily be too dense, taste too much like flour, or just be way too dry. We can ensure you that these Fudge Brownies are none of that.

We started with a simple base. The base has melted butter to ensure we get every inch of sugar and flour coated in buttery goodness. The butter being melted also helps keep these brownies moist. The base gets quickly mixed together in stand mixer and bakes for just 15 minutes or so. This short bake time also helps ensure that the brownies don’t get too overcooked resulting in the burnt cocoa taste and once again way too dry!

Where these brownies take the flavor to a new level is with the simple fudge layer to go on top. This is super easy to make in just one saucepan while the brownies are baking in the oven.  This layer of fudge brings another layer of flavor to the base that is creamy, chocolate goodness. It is worth nothing that this recipe can easily be doubled to fit in a 9×13 pan. Also, if you would rather a little less fudge you can easily half the fudge topping for the 8×8 pan or when making it in a 9×13 keep the fudge ingredients the same versus also doubling.

Ingredients
  

For the brownie base:

  • 1/3 cup Salted Butter melted
  • 1 cup Granulated Sugar
  • 1/4 cup Cocoa Powder
  • 2 Large Eggs
  • 1 tsp Kosher Salt
  • 1 tsp Vanilla Extract
  • 3/4 cup All Purpose Flour (128g)

For the fudge topping:

  • 1/4 cup Salted Butter
  • 1/4 cup Milk
  • 1/4 cup Cocoa Powder
  • 1 cup Granulated Sugar
  • 1 tsp Vanilla Extract
  • 1 1/2 cups Powdered Sugar

Instructions
 

For the brownie base:

  • Preheat the oven to 350 degrees Fahrenheit. Grease an 8x8 casserole dish with oil.
  • In a bowl of a stand mixer, combine the 1/3 cup of melted Salted Butter, 1 cup of Granulated Sugar, and 1/4 cup of Cocoa Powder. Mix on a medium speed until fully incorporated.
  • Add in the 2 Large Eggs, 1 tsp of Kosher Salt, 1 tsp of Vanilla Extract, and 3/4 cup of Flour.
  • Mix on medium speed to fully incorporated then pour into the 8x8 casserole dish.
  • Bake for 15-18 minutes or until a toothpick comes out clean.

For the fudge topping:

  • Towards the end of the bake time for the brownie base, begin making the fudge top.
  • In a medium saucepan, melt together the 1/4 cup of Salted Butter, 1/4 cup Milk, 1/4 cup of Cocoa Powder and 1 cup of Granulated Sugar.
  • Bring the mixture to a boil and allow to stay at a boil for just 2 minutes.
  • Remove from the heat and add in the 1 1/2 cups of Powdered Sugar and 1 tsp of Vanilla Extract. Stirring fully together to create a smooth, slightly thick texture.*
  • Pour the fudge mixture onto the slightly cooled brownie base, smoothing it out to an even layer.
  • Allow to cool slightly to set into to place and enjoy!

Notes

*You can always add more powdered sugar if your fudge is not very thick and if it is too thick, add just a splash of milk.
