White Cheddar Mac 'n' Cheese

Medium Shells Pasta or noodles of your choosing
Half and Half
Sharp White Cheddar
Juice from 2 Lemons
Cook your pasta according to its packaging.
While the noodles are cooking, in a medium sized skillet melt the 4 tbsps of Salted Butter.
Once the butter is melted, add in the 4 tbsps of All-Purpose Flour. Stirring together until all flour has been absorbed by the butter. Continue to cook for 1-2 minutes to develop a deeper color roux.
Now add the 2 cups of Half and Half, stirring well. Allow the liquid to come to a boil and thicken - 2 to 3 minutes.
Once thick, stir in the 2 tsps of Kosher Salt, 1 tsp of Pepper, and 1/2 tsp of Ground Mustard.
Next add the 2 cups of shredded White Cheddar and 4oz of Mascarpone. Stirring together until fully incorporated.
Combine cooked noodles and white cheddar sauce.
If using lemon juice, stir it in now and add more salt and pepper to taste. Enjoy!
