White Cheddar Mac 'n' Cheese

  • 1 pound Medium Shells Pasta or noodles of your choosing
  • 4 tbsps Salted Butter
  • 4 tbsps All-Purpose Flour
  • 2 cups Half and Half
  • 2 tsps Kosher Salt
  • 1 tsp Black Pepper
  • 1/2 tsp Ground Mustard
  • 2 cups Sharp White Cheddar shredded
  • 4 oz Mascarpone
  • Juice from 2 Lemons optional


  • Cook your pasta according to its packaging.
  • While the noodles are cooking, in a medium sized skillet melt the 4 tbsps of Salted Butter.
  • Once the butter is melted, add in the 4 tbsps of All-Purpose Flour. Stirring together until all flour has been absorbed by the butter. Continue to cook for 1-2 minutes to develop a deeper color roux.
  • Now add the 2 cups of Half and Half, stirring well. Allow the liquid to come to a boil and thicken - 2 to 3 minutes.
  • Once thick, stir in the 2 tsps of Kosher Salt, 1 tsp of Pepper, and 1/2 tsp of Ground Mustard.
  • Next add the 2 cups of shredded White Cheddar and 4oz of Mascarpone. Stirring together until fully incorporated.
  • Combine cooked noodles and white cheddar sauce.
  • If using lemon juice, stir it in now and add more salt and pepper to taste. Enjoy!
