Chocolate Cherry Dump Cake is a classic favorite! With made from scratch “cake mix” to ensure it has the best ingredients and the best taste!

The Facts

One of the nicest parts about dump cake, and something we mentioned in our first dump cake post here, is how modular the concept of this recipe is. The core of the recipe relies on a cake-mix moistened with butter on top of a filling (which so far has been canned pie filling). This cherry chocolate dump cake is a testament to that modularity given it is built on the same foundation as our strawberry one with just some adjustments to the mix and filling to make something totally new!

The mix itself uses mostly the same stuff. For this time around we decided to use cake flour, but either cake or all-purpose will work. Since we were going for chocolate then of courses, we needed cocoa powder. After looking at other recipes, it became clear that anywhere from 1/8 to a full cup of cocoa would be acceptable. We decided to stick in the middle until it had a deep (but not too deep) chocolatey look.

On the note of cocoa, we used a special dark version. This cocoa is almost the same as your typical cocoa but with no acidity. For a cake mix that would usually be a red flag. No acid means no reaction with baking powder which means no rise. However, this is dump cake, and we do not need rise, making this a perfect use of this cocoa. To give a slight enhancement to the cocoa we also included a dash of instant coffee.

For the filling we kept it very simple. We expanded the amount of filling to be two cans, which meant more cherry per bite. If cherries aren’t your thing feel free to experiment with a different filling complementary to chocolate. We also considered sticking with strawberry but would love to hear any other suggestions.

The only update to the dump cake’s directions we used was provisioning the butter a bit differently. Before we cut the entire 1 ½ cups into the dry ingredients. This time we split half into the mix and half to go on top. This made the top gooier (more of an aesthetic choice, as if that matters for dump cake) but it is up to you how you want to distribute the butter.

Ingredients
  

For the cake base:

  • 2 cups Cake Flour (300g)
  • 3/4 cup Granulated Sugar (200g)
  • 1/2 cup Special Dark Cocoa Powder (50g)
  • 1/2 tsp Kosher Salt
  • 1/2 tsp Instant Coffee Powder
  • 1/4 cup Non-fat Milk Powder (30g)
  • 12 tbsps Salted Butter (3/4 cup)
  • 2 21oz Cherry Pie Filling Cans

For the fudge frosting:

  • 5 tbsps Salted Butter
  • 1/3 cup Milk
  • 1 cup Granulated Sugar (250g)
  • 1 cup Semi-sweet Chocolate Chips
  • 4 tbsps Powdered Sugar

Instructions
 

For the cake:

  • Preheat the oven to 350 degrees Fahrenheit.
  • Grease a 9x13 casserole pan with oil.
  • In a medium bowl, combine the 2 cups of Cake Flour, 3/4 cup Granulated Sugar, 1/2 cup Special Dark Cocoa Powder, 1/2 tsp of Salt, 1/2 tsp of Instant Coffee, and 1/4 cup Non-fat Milk Powder.
  • Add 6 tbsps of the Butter in slices to the flour mixture and using a pastry cutter to incorporate it fully into the flour until well combined.
  • Pour the 2 cans of Cherry Pie Filling into the bottom of the 9x13, spreading it out evenly.
  • Add the flour mixture on top, not mixing it together with the cherries, but evenly spreading it across the top. Add the remaining 6 tbsps of Butter in slices across the top of the flour.
  • Bake for 50 minutes and then remove to cool slightly while you prepare the frosting.

For the fudge frosting:

  • In a medium sauce pan, melt together: 5 tbsps of Butter, 1/3 cup of Milk, 1 cup of Granulated Sugar and 1 cup of Semi-Sweet Chocolate Chips.
  • Bring to a boil and allow to boil for 1-2 minutes. Remove from heat and whisk in the 4 tbsps of Powdered Sugar.
  • Pour over the slightly cooled cake and allow to set for 5-10 minutes before serving. Optional, to dust the top with some Powdered Sugar as well.
