Green Chili comes in many variations; some are designed to be a sauce, some a standalone soup. Others pack the spice; others go for the sweet tanginess route instead. This Crockpot Pork Green Chili is tangy, not slacking on the heat, and can be eaten as its own meal or to be a topping for another dish.
A lot of Green Chili recipes lack on one thing, they use too much canned ingredients instead of fresh. This recipe, one that has been in our family for awhile now, focuses on utilizing fresh ingredients. It uses fresh tomatoes and tomatillos that take the flavor that much further. Although, we are using a 7oz can of green chilies instead of fresh, simply because green chilies are not always available to be purchased when we want to make this delicious chili. Freshly roasted green chilies can definitely be substituted if you have them!
Another key aspect of this green chili is the pork shoulder. This meat is just fatty enough that it provides a ton of flavor without making the overall broth too greasy. Do not switch this out for any other cut of pork! It is also important to season it with salt and pepper prior to mixing it with the rest of the ingredients in the crockpot.
The crockpot really makes this an easy dish and benefits it too! The simplicity of tossing it all in and letting it cook all day allows the flavors to fully meld together. We top it off with a touch of sour cream (this also helps tone down the spiciness), fresh cilantro, and a warm tortilla to dip into it!
